Rich source of Vitamin A, Vitamin C and Vitamin K. 1 cup raw carrots also has 42 mg of calcium and glycemic load of 3 (as opposed to 16 oz pure carrot juice which has higher glycemic load of 8 as fiber is no longer present). This sweet root came from the Albuquerque farmer’s market from student run garden and is a hybrid with lovely fuchsia outer layer.

good morning!
today i tried my hand at making some date syrup, and it turned out wonderfully. date syrup is great because it’s deeper and milder than most other liquid sweeteners, but not as bitter as molasses - perfect for just giving a little bit of sweetness to your breakfast. here’s how you make the syrup, it’s surprisingly easy. for my oatmeal i used 1 part syrup, 1 part boiling water, and 1 part soy milk, and it ended up being one of the best oatmeal bases i’ve ever tried.
